Kay’s Chicken

o   1 lb. skinless, boneless chicken breasts cut in bite-sized pieces

o   1 small onion, thinly sliced

o   1 carrot, sliced

o   1 celery stalk, sliced

o   2 tsp chopped garlic

o   1 tsp dried oregano

o   ½ tsp dried parsley

o   ¼ tsp salt (optional)

o   1 16 oz. can, no salt added, stewed tomatoes, not drained

o   1 ½ cups low salt/fat chicken broth

o   2 ups sliced potatoes

o   Spray a large skillet with non-stick cooking spray

o   Sauté chicken until brown

o   Add onion, carrot, celery, garlic, oregano, parsley, tomatoes, chicken broth and potatoes

o   Cover and simmer over medium heat until potatoes are tender
