Turkey Stuffing

This was mine and the whole family’s favorite part of Thanksgiving.

This amount is fine for a 12lb. turkey (rub turkey with lemon juice)

    • 1 package of stuffing croutons
    • 6-7 stalks of parsley
    • 1 cup of celery chopped
    • 1/2 cup of onions chopped
    • 2 bottle of clam juice
    • 1 dozen of oysters cut up
    • Rub turkey with:
      • Poultry seasoning
      • 1 t pepper
      • a little salt
      • 1/2 cup of melted margarine
    • Place stuffing in cavity of turkey.
    • Place turkey in hot oven and lower the oven to 350 degrees.
    • Place 2 cups of water (or chicken broth) in pan with turkey.
    • Let Turkey roast for about 4 hours. If it becomes too brown cover loosely with foil.
    • If stuffing seems dry you can add water or broth.

    • Boil together neck and giblets, NOT the liver, 1 whole onion and 2 bay leaves.
    • Remove the fat in turkey pan and add above broth to pan.
    • May thicken with flour.
