• 2 lbs. of chopped beef
  • 1/2 cup  of partially cooked rice
  • 1 chopped onion
  • Parsley and mint
  • Pepper and salt
  • Mix ingredients with a little water
  • Make meat balls and wrap in grape leaves or slightly cooked romaine lettuce leaves
  • Cook in chicken broth until they are done
  • Use broth to make avgolemono sauce
  • (Add juice of 1 lemon to 3 beaten egg yolks and a little cold water)
  • Then add a little of the boiling chicken broth to the above mixture
  • Add this to the meat balls
  • When ready to serve, gently reheat and service with a crusty bread
