• 1 1/2 lbs. of chopped meat
  • 1 onion and 1 garlic clove
  • 3/4 cup of breadcrumbs or 4 slices of soft white bread
  • 1/4 t each, salt, pepper, nutmeg
  • 1 T of olive oil
  • 1 t each parsley, mint
  • 1 T of grated cheese
  • 1 egg
  • Place onion, bread crumbs, parsley, mint, olive oil, cheese, 1/2 cup of water and egg into food processor.
  • Add to chopped meat.
  • Make keftedes, meat loaf or hamburgers. For meatloaf I often use a combination of beef, lamb and pork.
  • Keftedes may be broiled or sautéed. If sautéed, roll lightly in flour and sauté in olive oil. Drain on paper towels.
  • Ingredients can be varied according to individual tastes. Chopped turkey can be used for low cholesterol diets. If making meat loaf, 1 small can of tomatoes sauce can be added to gravy in meat loaf at end of cooking period.
