TURKEY STUFFING
This was mine and the whole family’s favorite part of Thanksgiving. This amount is fine for a 12lb. turkey (rub turkey with lemon juice)
- 1 package of stuffing croutons
- 6-7 stalks of parsley
- 1 cup of celery chopped
- 1/2 cup of onions chopped
- 2 bottle of clam juice
- 1 dozen of oysters cut up
- Stuffing
- Rub turkey with:
- Poultry seasoning
- 1 t pepper
- a little salt
- 1/2 cup of melted margarine
- Place stuffing in cavity of turkey.
- Place turkey in hot oven and lower the oven to 350 degrees.
- Place 2 cups of water (or chicken broth) in pan with turkey.
- Let Turkey roast for about 4 hours. If it becomes too brown cover loosely with foil.
- If stuffing seems dry you can add water or broth.
- Rub turkey with:
- Gravy
- Boil together neck and giblets, NOT the liver, 1 whole onion and 2 bay leaves.
- Remove the fat in turkey pan and add above broth to pan.
- May thicken with flour
